Sunny Anderson’s Easy Bacon-Ranch Grilled Cheese Sandwich

Sunny’s Easy Bacon-Ranch Grilled Cheese Sandwich
Makes 2 sandwiches


4 tablespoons unsalted butter, softened
4 tablespoons store-bought ranch seasoning
½ cup ketchup
1 teaspoon apple cider vinegar
½ cup freshly shredded mozzarella
½ cup freshly shredded gruyere cheese
4 slices white bread
4 pieces of bacon, cooked crisp, chopped


1. In a small bowl, mix together butter with 2 tablespoons ranch seasoning; set aside. In another small bowl, mix together remaining 2 tablespoons ranch seasoning, ketchup, and vinegar; set aside. Place mozzarella and gruyere in a medium bowl and toss to combine; set aside.

2. Place a large non-stick skillet over low heat and add 2 tablespoons of butter mixture. Butter one side each of 2 bread slices with remaining butter and set aside, butter-side up. Place remaining 2 slices unbuttered bread in skillet, carefully moving bread so that it soaks up the butter. Divide half of cheese mixture evenly between each bread slice, followed by chopped bacon, and then with remaining cheese mixture. Top with remaining prepared bread slices, buttered-side up.

3. Increase heat to medium and cook until bottom slices begin to toast and turn golden. Carefully flip sandwiches and cook until cheese is melted and bottom is golden and toasted. Remove sandwiches from skillet, cut each in half on the diagonal, and serve with ketchup mixture for dipping.
