Richard Blais’ Cauliflower Mac and Cheese

Richard Blais’ Cauliflower Mac and Cheese
Serves 4 to 6


1 head yellow cauliflower, cut into florets
3 to 4 cups heavy cream
4 cups cooked and chilled elbow macaroni
1 ½ cups shredded white cheddar cheese, plus more for topping
1 cup shredded mozzarella cheese
¼ to ½ cup grated parmesan cheese
¼ to ½ cup breadcrumbs
¼ cup (1/2 stick) unsalted butter, cut into small cubes


1. Preheat oven to 350 degrees.

2. Place cauliflower in a large saucepan and add enough heavy cream to cover. Cook over medium-low heat until cauliflower is tender, 10 to 12 minutes. Transfer cauliflower mixture to the jar of a blender or the bowl of a food processor; blend or process until smooth and thick.

3. Transfer cauliflower mixture to a large bowl and add macaroni, cheddar cheese, and mozzarella; stir to combine. Transfer to a 3-quart oven-proof baking dish. Top with parmesan cheese and breadcrumbs; dot top with butter cubes.

4. Transfer baking dishes to oven and bake until bubbly, about 30 minutes. Preheat broiler. Transfer baking dishes to broiler and cook until tops are golden brown, 1 to 2 minutes more. Serve.
