Maneet Chauhan’s “Build-a-Bhel” (Bhel Puri)

This appetizer comes from the ever-brilliant mind of Chef Maneet Chauhan, and is a fun thing to serve or make as a group at a party (let everyone shake their own). Maneet makes this in an Indian-Tiffin lunchbox, but any sealable container will work.

“Build-a-Bhel” (Bhel Puri)
Serves 3 to 4


3 teaspoons coriander mint chutney, plus more for serving
3 teaspoons tamarind chutney, plus more for serving
3 tablespoons raita, optional
2 cups Bhel Mix (puffed rice)
1/2 cup finely chopped red onion
1/2 cup finely chopped roma or heirloom cherry tomatoes
1 teaspoon chopped green chile, like serrano
3 tablespoons chopped fresh cilantro
1/2 cup peeled, cut into 1/2-inch pieces, boiled golden potatoes
2 tablespoons chopped raw mango
Sea salt, to taste
1/2 teaspoon Indian red chili powder
1 teaspoon roasted cumin powder
1 teaspoon chaat masala
2 tablespoons freshly squeezed lemon juice
Chopped cucumber
Pomegranate seeds, for garnish
1/4 cup nylon sev, for garnish
Cilantro leaves, for garnish


1. In a sealable container, place coriander mint chutney, tamarind chutney, and raita. Add Bhel Mix, onion, tomatoes, chiles, cilantro, potatoes, mango, salt, red chili powder, cumin, chaat masala, lemon juice, and cucumber. Seal and shake very well to combine.

2. Divide between serving containers and garnish with pomegranate seeds, nylon sev, and cilantro. Serve immediately with your choice of chutney.
