Jordan Andino’s Late Night Queso Recipe!
Who would think you could turn a late-night snack into multiple dishes? Chef Jordan Andino, that’s who. He uses this queso in many ways. First, he mixes the queso with hot sauce and pours it over sliders one night. And then makes killer nachos with the queso and leftover slider meat the next night. What will you make with this queso? Late Night Queso
Makes 4 cups
2 cups heavy cream
2 cups store-bought cheese sauce
1/2 cup chopped tomatoes, plus more for garnish, if desired
1/2 cup chopped cilantro, plus more for garnish, if desired
1/2 cup chopped red onions, plus more for garnish, if desired
1/4 cup minced jalapeños, plus more for garnish, if desired
1 tablespoon minced garlic puree
2 cups shredded Mexican cheese
Corn tortilla chips
1. In a medium saucepan over medium-low heat, bring heavy cream to a boil.
Whisk in cheese sauce. When thoroughly combined, stir in chopped tomato, cilantro, red onion, jalapeño, and garlic puree. Bring to a light boil, stirring continuously.
2. Add shredded cheese, and stir to combine. Heat through until all cheese is melted.
3. Pour over chips, and garnish any other desired toppings.
