Gyro Sliders with Tzatziki Sauce

Gyro Sliders with Tzatziki Sauce
Makes 10 (2-ounce) sliders


For the tzatziki sauce:
1 large English cucumber, grated
2 tablespoon chopped fresh dill
1 tablespoon lemon juice
1 teaspoon minced garlic
1 cup Greek yogurt

For the gyro sliders:
1/2 tablespoon virgin olive oil
1 medium onion, grated
4 cloves garlic
1 pound ground beef
1 pound ground lamb
1 teaspoon cumin
1 tablespoon oregano
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
2 cups plain breadcrumbs

For serving:
Slider buns
Sliced Roma tomatoes
Shredded iceberg lettuce


1. Make the tzatziki: In a strainer fitted with cheesecloth, place cucumber and let sit for 15 minutes to remove the extra moisture. Squeeze out any remaining liquid.

2. In a medium bowl, mix together the cucumber, dill, lemon juice, garlic, and yogurt. Set aside.

3. Make the gyros: Preheat the oven to 350 degrees. Use oil to lightly coat a loaf pan.

4. In the base of a food processor, add the onion and garlic. Pulse until a paste forms, about 3 minutes.

5. In a large bowl, mix together onion paste, beef, lamb, cumin, oregano, salt, pepper, and just enough breadcrumbs to keep the mixture together. Spread into the loaf pan, and bake until meat is cooked, about 1 hour. Remove from oven and let cool for 10 minutes. Carefully tip pan over onto a cutting board, and slice meat into 1-inch pieces.

6. To serve, place a slice of meat onto the bottom half of a bun and top with tzatziki sauce, tomatoes, lettuce, and top half of bun.
