Everything Bagel Mac and Cheese

This fun and oh-so-addictive flavor combination comes from the quirky and creative mind of Food Network star Molly Yeh. Get ready to never look at mac and cheese the same way again! Plus, you can swap the breadcrumbs for bagel crumbs and really embrace the best of both world in one bowl.

Everything Bagel Mac and Cheese
Serves 4

Ingredients

1/4 cup (1/2 stick) unsalted butter
1/2 yellow onion, finely chopped
Kosher salt, plus more for topping
1/4 cup all-purpose flour
2 1/2 cups whole milk
4 ounces cream cheese
4 ounces white cheddar or gruyere or a mix of both, shredded
1 ounce parmesan, shredded
1 1/2 teaspoons barley malt syrup, optional
Few pinches crushed red pepper
Freshly ground black pepper
1/2 pound pasta, such as rigatoni
Extra-virgin olive oil
1/2 cup chopped chives or scallions
3/4 cup panko breadcrumbs or bagel crumbs
1 tablespoon melted butter
1 tablespoon sesame seeds
1 tablespoon poppy seeds
1 tablespoon dried minced garlic
1 tablespoon dried minced onion
Ketchup, to serve

Directions

1. Preheat the oven to 375 degrees.

2. In a large pot over medium-high heat, melt butter. Add onion and salt and cook, stirring, until soft, 5 to 7 minutes. Stir in flour and cook 1 minute. Add 1 cup milk at a time and cook, whisking continuously, until thickened after each addition.

3. Stir in cream cheese, cheddar, and parmesan until melted. Add barley malt, if using, red pepper, black pepper, and salt.

4. Prepare pasta according to package directions, cooking 1 minute less than directed. Drain and toss with a drizzle of oil. Transfer to cream cheese mixture and toss to cover. Stir in chives. Transfer to an 8-inch baking dish.

5. In a medium bowl, mix together the breadcrumbs and butter. Spread evenly over the top of the mac and cheese.

6. In the same medium bowl, stir together sesame seeds, poppy seeds, garlic, onion, and a few pinches salt. Sprinkle over breadcrumb mixture.

7. Bake until golden brown, about 25 minutes. Let cool slightly before serving with ketchup.
