Duff Goldman’s Mini Banana Bread Waffles

Mini Banana Bread Waffles
Makes 14 to 16
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
Pinch sea salt
2 super ripe bananas, mashed
3/4 cup buttermilk
2 tablespoons light brown sugar
1 teaspoon pure vanilla extract
2 large eggs
3 tablespoons melted, unsalted butter
Nonstick cooking spray
1. Preheat the waffle iron.
2. In a medium mixing bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
3. In a large mixing bowl, stir together bananas, buttermilk, sugar, vanilla, eggs, and butter. Mix well.
4. Gently fold the dry ingredients into the wet ingredients. Spray the waffle iron with cooking spray. Cook until waffle iron is done, about 4 to 6 minutes. Repeat with remaining batter.
