Double Stuffed Raw(ish) Vegan “Oreos”

Want a sweet treat in a matter of minutes? And you don’t even have to turn on the oven. Food blogger and cookbook author Jerrelle Guy has taken a well-loved cookie and made it completely vegan and raw.

Double Stuffed Raw(ish) Vegan “Oreos”
Makes 9

Ingredients

For the chocolate cookies:
7 dates, pitted and soaked
1 1/2 cups almond flour or almond meal
1 tablespoon pure maple syrup
1/3 cup cacao powder
Pinch sea salt
Splash pure vanilla extract (or vanilla bean powder to keep it 100 percent raw)

For the filling:
4 cups unsweetened flaked coconut
Pinch sea salt
Splash pure vanilla extract (or 1/2 teaspoon vanilla bean powder to keep it 100 percent raw)
1 tablespoon pure maple syrup, to sweeten

Directions

1. Make the chocolate cookies: In the base of a food processor, add dates, almond flour, maple syrup, cacao powder, salt, and vanilla. Blend until a smooth dough is formed.

2. Place the dough between 2 sheets of parchment paper and roll to 1/4-inch thick. Using a 2-inch cookie cutter, cut out 18 cookies and set aside on a baking sheet. You will need to re-roll the dough to get enough cookies.

3. Make the filling: In the base of a high powdered blender, add the coconut flakes, salt, vanilla, and maple syrup, Blend until smooth enough to roll the mixture into a dough, about 5 minutes. Be careful not to blend too long, or you will get gooey coconut butter.

4. Place the mixture between 2 sheets of parchment paper and roll out. Using a 2-inch cookie cutter, cut out the filling. Stack two of the filling cut-outs and sandwich between two chocolate cookies. Continue until all the filling is gone. If you like, place the stuffed cookies in the freezer to firm up slightly before serving.
