Cheeseburger Onion Rings

Cheeseburger Onion Rings
Makes 6 to 8 rings


Canola oil, for frying
1 pound ground beef
1 teaspoon sea salt
1/2 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 large white onion
1/4 pound cheddar cheese, cut into 1-inch squares
1 cup all-purpose flour
5 large eggs, beaten
3 cups panko breadcrumbs
Ketchup, to serve


1. Fill a 6- to 8-quart heavy-bottomed pot or deep fryer halfway with oil. Over medium heat, bring oil to 350ºF.

2. In a large bowl, mix together the ground beef, salt, pepper, and garlic powder.

3. Peel and slice the onion into 1-inch rings, and detach the rings from each other.

4. Take a spoonful of the beef mixture and press it into the bottom of a ring. Place a cheddar slice into the center of the beef. Seal the top with another spoonful of the beef, pressing it flat. Repeat with the remaining rings.

5. In three medium bowls, place the flour, eggs, and breadcrumbs.

6. Dip a ring into the flour, shaking off any excess, the eggs, the breadcrumbs, back to the eggs, and finally into the breadcrumbs. Repeat with the remaining rings.

7. Carefully add the rings to the oil and fry for 5 to 6 minutes, until deep golden brown.

8. Remove to a paper towel to drain. Serve with ketchup.
