Cathy Mitchell’s Apple Monte Cristo

Apple Monte Cristo
Makes 2 sandwiches
4 ounces Gouda cheese, shredded
1 ounce cream cheese, softened
2 teaspoons honey
½ teaspoon ground cinnamon
4 slices cinnamon raisin bread
1 small apple, cored and thinly sliced
½ cup milk
1 large egg, beaten
1 tablespoon unsalted butter
Confectioner’s sugar, for serving
1. In a small bowl, mix together Gouda, cream cheese, honey and cinnamon until well combined. Spread cheese mixture evenly over each slice of bread. Layer apple slices evenly over 2 prepared bread slices; top with remaining bread slices, cheese side-down.
2. In a shallow bowl, whisk together milk and egg. Dip sandwiches in egg mixture, turning to coat.
3. Place butter in a large Red Copper Pan set over medium heat; cook until melted. Add sandwiches and cook, turning once, until cheese is melted and sandwiches are golden brown, 4 to 5 minutes per side. Transfer each sandwich to a serving plate and dust with powdered sugar before serving.
