Breakfast Pizza

Former Miss Universe Olivia Culpo brings us a new way to start (or end) the day. You can buy great ready-made pizza dough at your local grocery or your favorite pizza shop. It’s a great time saver and makes this breakfast pizza a breeze to make. It’s also simple to make vegetarian by skipping the bacon.

Breakfast Pizza
Serves 2 to 4

Ingredients

Coarse-grain cornmeal, for dusting
8 ounces pizza dough, thawed if frozen
1 to 2 tablespoons extra-virgin olive oil
Coarse sea salt, to taste
Freshly ground black pepper, to taste
3/4 to 1 cup shredded Monterrey Jack cheese
4 strips turkey bacon, cooked and chopped
1 large egg
Sliced avocado

Directions

1. Preheat oven to 500 degrees, with a pizza stone on the bottom shelf, for at least 20 minutes.

2. On a cornmeal-dusted work surface or pizza peel, stretch dough into a 10-inch round. Drizzle and brush oil to the edges. Season with salt and pepper. Top evenly with cheese and bacon.

3. Gently slide pizza from peel onto the center of the pizza stone, using a slight jerking motion. Bake until dough starts to puff and cheese is melted, about 5 minutes. Carefully slide the peel under the pizza and remove from oven. You can also do this in the oven, if you’re very careful. Using the back of a spoon, make a small indentation in the pizza; crack the egg into the hole. Return to oven and bake until whites have set, about 1 to 2 minutes. Use the peel to remove the pizza from the oven.

4. Garnish with avocado. Slice and serve immediately.
