Baked Vanilla Mini Donuts

Baked Vanilla Mini Donuts
Makes 36 mini donuts


For the donuts:
Nonstick cooking spray
1 1/4 cup cake flour
3/4 teaspoon baking soda
1/2 teaspoon table salt
3/4 cup granulated sugar
3/4 cup vegetable oil
1 large egg, at room temperature
1/2 teaspoon pure vanilla extract
1/2 cup low-fat sour cream

For the vanilla frosting:
1 cup unsalted butter, softened
1/2 cup whole milk
2 teaspoons pure vanilla extract
6 to 7 cups confectioner’s sugar

For serving:
Colorful sprinkles


1. Make the donuts: Preheat the oven to 325 degrees. Spray mini-donut pan with cooking spray.

2. In a small bowl, whisk together flour, baking soda, and salt.

3. In a large bowl, whisk together sugar and oil until well combined. Beat in egg and vanilla. Whisk in flour mixture, alternating with sour cream, in three batches. Divide batter evenly among mini-donut pan, saving any extra batter for the next batch.

4. Place in oven and bake until a toothpick inserted in the center donut comes out clean, about 9 minutes. Remove from oven and let cool.

5. Make the frosting: In a medium bowl, whisk together butter, milk, vanilla, and confectioner’s sugar, adding more sugar if needed, until the desired consistency is reached.

6. To serve, top donuts with frosting and sprinkles.
