Acai Bowl

Chef Richard Blais has a refreshing and power-packed smoothie in a bowl that is sure to kickstart your day. Have fun experimenting with the different types of fruit and toppings.

Acai Bowl
Serves 1


1 packet frozen unsweetened acai
1 tablespoon collagen protein
2 teaspoons flax seeds
2 teaspoons maca powder
1 frozen banana
3/4 cup any other frozen fruit
Handful baby spinach, washed
1/2 cup, up to 3/4 cup coconut water
Sliced banana
Sliced star fruit
Sliced kumquats, optional
Dragonfruit balls, halved
2 teaspoons hemp seeds
Shredded coconut, unsweetened
Cacao nibs


1. In the base of a blender, add acai, collagen powder, flax seeds, maca powder, frozen banana, fruit, and spinach. Blend until smooth, starting with 1/2 cup coconut water and adding more depending on desired thickness.

2. Transfer to a bowl and arrange bananas, star fruit, kumquats, if using, dragonfruit, hemp seeds, coconut, and cacao nibs over the top.
