How 20 Days of Clean Eating Can Change Your Life

Dr. Ian Smith explains “clean eating,” and how avoiding processed foods for just 20 days can make a huge difference in your health. He also shares three yummy snacks that are made of totally clean (and totally delicious!) foods.

Use this simple recipe from Dr. Ian Smith’s cookbook to make an awesome egg salad (or wherever else you need a little mayo). For snacking, Dr. Ian Smith recommends 1/3 cup egg salad, seven feta- or blue-cheese stuffed olives, or six watermelon, cucumber, and one cube feta skewers. The Pickler and Ben kitchen found the mayo tastes the best when whisked by hand.

Clean Mayonnaise
Makes 2 cups

Ingredients

1 large egg
1 large egg yolk
1/2 teaspoon organic honey
1 1/2 teaspoon lemon juice
1 teaspoon organic mustard
2 teaspoons apple cider vinegar
1/2 teaspoon sea salt, plus more to taste
1 cup extra-virgin olive oil

Directions

1. If whisking by hand: In a medium bowl, combine egg, egg yolk, honey, lemon juice, mustard, vinegar, and salt. Whisk until blended and thickened, 30 to 60 seconds. It should be a bright yellow.

2. In a very slow, steady stream, pour in 1/2 cup oil, whisking continuously, 3 to 5 minutes. Gradually add the remaining 1/2 cup oil, whisking until mayonnaise is thickened, about 6 minutes. Now the mayonnaise will appear lighter in color. Season with more salt, if needed. Place in an airtight container and keep refrigerated.

3. If using a blender: In the base of a blender, add the egg, egg yolk, honey, lemon juice, mustard, vinegar, and salt. Turn blender to low, slowly pour the oil through the lid a drop at a time, then pour in a small, slow stream. Blend until mixture thickens. Taste and adjust seasonings accordingly. Refrigerate in an airtight container.
